New Mexico is "Chile Capital" of the world.
It is chile harvesting time during the months of August and September.
Every grocery store in the state has roasting equipments setup
in its parking lot,the air is filled with chile roasting aroma.
People buy chile by the sack,they can either roast the chile themselves
or have the store roast it for them.
Last month I bought a 40 lb (20kg) sack
and have the store roast the chile for me.
The pictures you see were my chiles being roasted.
I took the roasted chile home and let it steamed in the bag, then I put them in
freezer bags (10/bag) and freeze them (I got 19 bags).
It's easier to peel the skin off when needed.
I use these chile to make Mexican dishes, hot sauces,condiments etc.

每年的8月份~9月份是辣椒豐收的季節
這裡的食品雜貨舖兒都會紛紛在自家店面前的停車場上
架設起烘烤器具 好幫客人做烘烤的服務
每每到了這個季節
空氣裡總是瀰漫著烘烤辣椒時所散發出來的的幸福香味 久久不曾散去呢
人們總愛整袋整袋地買下這些豐收的辣椒
他們可以自行帶回家烘烤 或者也可以請店家幫忙他們做這個工作喔
上個月我買了40磅(相當於20公斤)一袋的辣椒
然後請店家幫我做烘烤的這個手續
首頁那張與下面2張照片所顯示的就是我那袋正在被烘烤中的辣椒
回家後 我會把烘烤過還有些許餘溫的辣椒放進冷凍專用袋
然後放進冰箱冷凍庫保存 因為這個方法
可以在我需要用它來做料理的時候 可以毫不費力的褪去它的外皮
相信嗎...一個冷凍專用袋我裝了10支辣椒 總共裝了19袋呢
通常 我會用這些已預先處理好的辣椒做些墨西哥料理
辣的蘸醬 或者把它們當調味用喔
