不知道Quinoa的中文是什麼. 有狼知道嗎?
我在超市看到這道涼拌菜, 買了試吃, 很好吃.
馬上買了一包回家自己做.
Quinoa 沙拉 by Haka
一杯 Quinoa放細孔過濾勺裏, 用水清洗後,
加兩杯水, 在小鍋裏煮熟 (約20 分鐘).
煮好的 Quinoa稍微透明, 很好看.
嚼起來有點脆脆的感覺.
再隨意加入葡萄乾, 蔓越橘乾, 烤香的南瓜子和杏仁,
用蜂蜜, 麻油, 少許鹽調味. 冷藏過更好吃.

藜麥(學名:Chenopodium quinoa,西方语言均為quinoa),亦稱灰米,是一種南 美洲高地特有的穀類植物,又稱印地安麥,或是奎藜。Quinoa這個字有母親的意思。原產於安地斯山脈,是南美洲最早的作物之一,約在西元前3000年就發現有種植這種作物的遺蹟。藜麥能適應高海拔,在海拔4000米的高原上,藜麥能長的非常高而且強壯。但目前北美利用基因科技研發出如何讓藜麥在低海拔也能生長的那麼好,對南美的農業產生了一些影響。
藜麥是南美洲在玉米還沒有普及前的重要作物,殖民地時代,西班牙 人認為這是低下的食物,然而現在藜麥在歐洲的地位相當高,被視為有機穀類之后,造成了一些廠商將白藜類(Chenopodium)的作物當作藜麥販賣。它們比藜麥更容易生長,但必須施以較重的農藥。營養成份也不如藜麥那麼高。目前科學研究顯示,與麥子或米不同的是, 藜麥包含充分的必需胺基酸(人體無法生產本身的氨基酸), 故它能夠特別的被人體完全消化。 它也包含對心臟很好而且豐富的脂肪酸歐米茄3。
煮食方式就像煮小米一樣。必須要煮熟了才能吃。通常要在滾水中煮沸約十分鐘,讓藜麥膨脹而且有輕微的味道出來就好,目前藜麥在歐美是有機穀類的熱門產品,在北美,美國人吃藜麥通常是四杯水對一杯藜麥,再加入其他的五穀雜糧,早上吃的話則會加上 蜂蜜、杏仁和莓果。此外,藜麥也很適合搭配略有苦味的蔬菜(如甘 藍菜)。

Current world production of just over 78 thousand metric ton is almost evenly split three ways between the three nations of Peru, Bolivia, and Ecuador.
Quinoa has come to be highly appreciated for its nutritional value, as its protein content is very high (12%–18%), making it a healthy choice for vegetarians and vegans. Unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids, making it an unusually complete protein source. It is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Quinoa is gluten free and considered easy to digest. Because of all these characteristics, quinoa is being considered as a possible crop in NASA's Controlled Ecological Life Support System for long-duration manned spaceflights.
