親愛的朋友們
Haka的女兒--Heather, 是一位Child Psychiatrist (孩童精神科醫師) 工作非常繁忙
平時忙的連飯都沒空煮, 但為了參加朋友的 BBQ party,
竟撥空烤了這個蛋糕, 送了照片來要Haka誇獎.
Heather說朋友都很捧場, 連蛋糕屑都沒留下.
這麼漂亮的蛋糕沒貼出來跟大家分享 實在是太可惜了
所以各位朋友們
歡迎大家一起來欣賞這好吃的蛋糕吧
巧克力蛋糕 原始食譜請按這裡
材料:
(Heather把原食譜稍做修改):
2 ¼ 杯中筋麵粉
1 ½ 茶匙蘇打粉 (baking soda)
½ 茶匙發粉 (baking power)
½ 茶匙鹽
¾ 杯未加糖的可可粉 (unsweetened cocoa)
1 茶匙即溶espresso 咖啡粉
¾ 杯熱水
2 杯糖
1/3 杯植物油
2 個大號蛋蛋白
1 個大號蛋
4 oz semi-sweet (半甜) 的巧克力豆 (chocolate chips), 先溶解好(註一)
2 茶匙香草精
½ 杯buttermilk (提去奶油的酸奶)
Mocha澆汁(Mocha Glaze) (可略, 圖片中蛋糕沒有澆汁)
少許糖粉(可略)
少許紅莓及藍莓(可略)
做法:
1. 烤箱預熱至華氏350度, 烤盤(容量12杯的bundt (註二)花形圓烤盤)預先塗薄薄一層油
3. 在一碗中, 用熱水混合好可可粉和咖啡粉, 放一旁待用 4. 在大碗中, 用電動攪拌器以低速拌打糖, 油, 蛋白和蛋, 打勻後, 再以高速打至乳霜狀(約兩分鐘). 減至低速, 加入3. 的混合物, 巧克力豆和香草精攪打. 再分次輪流加入1. 的混合物和酸奶(先加麵粉, 再加酸奶, 最後加的也是麵粉)直打到混合均勻(可用抹刀把黏碗邊未打到的麵糊刮下拌合攪打) 5. 麵糊倒入烤盤烤45分鐘. 可用牙籤插入蛋糕中心, 牙籤拿出不帶濕蛋糊時即是烤好 6. 蛋糕涼後扣出放盤中. 若有Mocha澆汁, 可在此時淋上. 上圖蛋糕沒有澆汁, 只灑了糖粉. 最後加紅藍莓裝飾.
(註一) 做這個蛋糕時, 我沒有把巧克力溶解加入麵糊一起打. 我把巧克力豆撒入麵糊, 讓它在烤箱內加熱溶解

2. 在一張臘紙上, 混合麵粉, 蘇打粉, 泡打粉和鹽
Mocha澆汁做法:
在中型碗中用兩茶匙熱水溶解1/4 茶匙espresso 即溶咖啡粉, 加入3 茶匙可可亞粉, 3大匙玉米糖漿, 1 大匙咖啡味道的酒液, 混合均勻. 再加入一杯糖粉, 攪至糖溶, 呈光滑狀, 大約有一杯.

Hi everyone, Thank you so much for your kind comments, which encourages me to do more baking! I have seen all your impressive talents here on your blogs as well... what a wonderful family-like community this is!! In terms of the mold, I used Nordicware Cast Aluminum baking pan... in this series they have many beautiful variations. DO NOT buy the proform series from Nordic because they are only a cheap version of the Cast Aluminum and will not produce the same results. The cake falls right out of the pan as long as you have sprayed some oil and dusted some flour into the pan prior to baking. Also make sure the cake is COOLED before attempting to get it out of the pan. I hope this helps. I also recently made a bundt Wine Cake... it is marvelous and exotic in flavor and VERY simple to make. I will post the recipe if others are interested. Heather

Heather, Welcome. Bundt Wine Cake sounds super exotic and I am very curious about the flavor. Did you use white or red wine? I imagine that the sweet sherry will work out fine. Hard to imagine the taste with red wine though. Look forward to your recipe and presentation!
Hello Heather, Thanks for sharing your recipe, it looks gorgeous and yummy. I forgot I have the same cake mold that I bought N years ago. It was used only once and quickly abandon to "ice castle". I shall dig it out and wait for you wine cake recipe. BTW do you believe I have a copper tube bundt pan that I bought before I got married? Now my daughter already graduated from grad school and has been working, I still have not use it. It's a museum piece now.

Dear Harushika, I used white wine, specifically a chardonnay. But I would imagine that sweet sherry would be delicious as well. I guess it depends on what your taste buds crave and/or how drunk you'd like to be after eating the cake? ; ) Just kidding, most of the alcohol evaporates during the baking but the delicious flavor is left behind, so it is safe for children to eat. I will present my Wine Cake when I get a chance... and I don't want to take up the blog as my mom told me that there is a line of recipes waiting. Can't wait to show you the recipe though!
