Dear friends,  

This is a Philippino dessert that my Philippino friend and I made.  She "prepared" the necessary ingredients after I found recipes on the web based on her description.  It was very yummy with a texture very similar to 烤年糕 or 日本年糕, which I had just tried today (my Taiwanese friend made it).  I used two 九分滿 cups of sugar, and the sweetness was only a little bit too sweet for me, but not too bad.  I also don't have sweet tooth, so it might have been just right.

親愛的朋友們

這個好吃的菲律賓甜點是我的一位菲律賓友人和我一起做的.
我根據她所說的做法上網找了近似的食譜然後由她準備了材料
這點心的口感跟我今天吃的另一位臺灣友人做的烤年糕或日本年糕非常的相近
這份食譜我用了2杯九分滿的糖, 但覺得有稍微甜了一些些, 但是吃起來還不錯喔
可能是我不嗜甜的關係吧

Cassava Cake
Yield: 1 Recipe – I didn’t know it turned out to be so big; otherwise, I would have tried only half.

份量: 我不知道做出來會這麼大, 要不然我會做原食譜份量的一半就好

frozen grated cassava

Ingredients:

• 4 c Fresh cassava          Fresh cassava   4杯
• 2 c Coconut milk             椰奶 2杯
• 2 tb Butter; melted          融化的奶油 2大匙
• 3 Eggs                              雞蛋 3個
• 2 c Sugar                          細砂糖 2杯
• 1 tb Salt                             鹽 1大匙

Instructions:

Beat eggs; add sugar butter and salt. Mix thoroughly. Add the grated cassava and coconut milk. Mix well and place in a pan (13x9inch) or bibinka mold lined with banana leaves. Bake at a preheated 350~ oven for about 35mins.  Use toothpick to check if it’s done.  If the surface turns very oily, it might be overcooked.  Some said that it is not done until you smell baked banana leave.

準備工作:
烤箱預熱 華氏350度 ( 攝氏180度 )

作法:

1. 把雞蛋打散後, 加入糖,鹽,與奶油, 攪拌均勻後, 加入grated cassava與椰奶
2. 作法1充分攪拌均勻後, 放入13x9 inch的烤盤或撲了香蕉葉的bibinka模型
3. 放入已預熱好的烤箱烤約35分鐘, 用竹籤插看看不沾黏即可出爐
4. 如果表面出現一些浮油, 也許是烤了稍微久了些, 也有些人說,如果聞到烤培香蕉葉的香味才算烤好喔


Topping:
There are a few choices.  My friend chose to make the kind her grandma used to make, i.e., browned coconut flakes + sugar—heat coconut flakes on the pan with medium-low heat till coconut flakes turn brown and oil come out of it, then add sugar to taste. BUT--- she got frozen coconut flakes, and no oil came out… we simply added some butter (1Tb).

上面的淋醬:

這有不同的選擇喔.  我友人選擇她祖母的配方
把椰肉在平底鍋內用中小火加熱直到呈金黃色且泌出了些油脂, 再加入糖直到自己喜歡的甜度即可
我朋友用的是冷凍的椰肉片兒, 沒什麼油泌出來, 所以我們加了1大匙的奶油


2nd choice: cheese
When baking of the above is half done, take it out and brush with coconut cream, then top with grated or strips of local cheese or cottage cheese.  Broil (top fire) until golden brown.

另一種是淋上起士
當放進烤箱烤約17分鐘後, 拿出烤盤, 刷上些椰乳後, 再放上些起士絲或者cottage cheese. 再放回烤箱烤約10分鐘, 轉Broil (top fire)讓表面微微焦黃即可
